Description

Wines do not all behave in the same way when exposed to oxygen and do not evolve in the same way.

As part of a collaborative project between Vinventions France, the IFV and Lycée de Rodilhan, a predictive test of the sensitivity of wines to oxidation has been developed. The test is based on an electrochemical analysis (voltametry). Studies on a large number of wines and experiments carried out on micro-oxygenation, transfers and fining have shown that the voltammetric signals differ according to the sensitivity of the wines to oxidation. The results and practical applications of this new tool will be presented at the talk.
