Headed by Vinséo, we will present the results of tests on sulphite-free traditional red wine vinification of Lactobacille plantarum whose bioprotection impact was monitored using flow cytometry by the company Dubernet.

This homofermentative bacteria is used to inhibit contamination flora and prevent malolactic fermentation which stops alcoholic fermentation and causes lactic spoilage and an increase in volatile acidity.

Cytometry helps to obtain a large scale microbiological cartography in a short space of time.
